This variety of truffle magnatum grows mainly in Italy and celebrations such as the one that takes place every year in the Grizane Cavour Castle, near the town of Alba, in Piedmont, have grown up around its delicacy. This is the international white truffle auction for charity, where the most famous restaurateurs and gourmets compete to obtain such a precious gastronomic diamond.

Most of the world's white truffle harvesting takes place in Italy. It is there that it proliferates naturally in the forests of the Piedmont region, where it is considered to originate.
Availability and opportunities to buy white truffle
The white truffle starts to grow in September, but its ripening point is not yet considered optimal for consumption. As it is such an exceptional and unique product, it is advisable to wait for its optimum moment to enjoy its aroma and flavour.
This optimum ripening moment comes with the cold. The sooner the cold arrives in the forests of the Italian Piedmont, the sooner we will be able to consume top quality white truffles. With a bit of luck, the first specimens appear in October.
As we get closer to winter, white truffles become more available and usually of better quality: if you want to consume fresh white truffles at their peak, the ideal months are November, December and, if the weather conditions are right, January.
White truffle quality
