Black Truffle Omelette

  • 8 eggs
  • 35g black truffle
  • 1 large tablespoon of duck fat
  • 1 pinch of dried thyme
  • Salt
  • Pepper

Recipe black truffle omelette

Cut the black truffle into small slices with a knife and place in a bowl.
Break the whole eggs into the same bowl, then beat well.
Season to taste and add the thyme. Leave the mixture to stand for 30 minutes at room temperature.
Heat the duck fat in a frying pan and when it has melted, add the eggs with the black truffle. Let it cook as you like the texture of the omelette.
Once it is cooked, we can serve it on the plate and then grate truffle on top.
